什麼是酵母?

酵母屬於單細胞真菌，處於活性時，乾酵母利用麵團中的糖分及澱粉，分解後釋放二氧化碳、氣泡及酒精，令到麵團發酵膨脹。全部在超市買到的包裝乾酵母，都是經過處理而在處於休眠狀態，但當遇上溫水及少許糖分或澱粉，便會輕易變得活躍起來。

常見的酵母:

*Active Dry 普通活性乾酵母

*Instant 速發乾酵母

　　一般Active Dry活性乾酵母，size比速發的較大。早一代乾酵母的建議，通常都叫用家浸暖水5至10分鐘預先激活；但其實現代的普通乾酵母都不需要這樣做了。發酵時間比速發的較長，而用量是速發的兩倍。換句話說，如果食譜建議用半茶匙instant yeast，而你手上就只有active dry yeast，你就需要用雙倍用量，即是一茶匙。

*新鮮酵母Fresh Yeast或星野或燕山鮮酵母

這些酵母沒有經過乾水處理，一般使用量約是乾酵母的3倍，或速發酵母的6倍。這種酵母要預先室溫培植。
